Workout Recap, Meal Plan, and Coronavirus Food Hoarding

Greetings, friends!

Popping in quickly to share my workout recap and meal plan a day late.  My Friday was more busy than usual because we traveled to our orthodontist back in central MA to get braces off for this girl!!

... and then did a make-up gymnastics class for this big girl:



That's her in the purple leotard.  She was such a big helper to her gymnastics teacher that day-- there were several young beginners who were new to the class and feeling super shy.  Her teacher was really having to coax a lot of them, or chase them as they ran for the door to find Mama!  J set a great example and listened so well and followed directions perfectly, and was chosen as the "helper" who showed everyone how to complete the stations several times.  It just blew my mind how big and helpful she is getting, and how I used to be the mom consoling the shy, crying toddler at her first class.  No more!  It's a tiny bit sad that those days are behind me, but mostly I'm SOOO happy and proud of my big girls. :)

So, those activities filled my Friday, and although I was able to complete the meal plan and the shopping list that afternoon, I didn't get it up here on the blog, so... here we go!

Workout recap:

Friday, 2/28: It was rainy outside and I woke up late, so I did my five miles on the treadmill.  My phone doesn't track pace on the treadmill very well so I don't bother with it.  Because I got a late start I had to get off the treadmill mid-run and kiss N goodbye; luckily she's getting herself ready without any help these days!  Talk about big and responsible!  The younger girls have a later bus time so I finished the run before they left.

Saturday, 2/29: rest day

Sunday, 3/1: 4.8 miles outside (gorgeous day!), 9'39" pace

Monday, 3/2: another treadmill run (it snowed overnight!), ~5 miles

Tuesday, 3/3: I repeated this fitness blender that I discovered last Tuesday... still loved it!  Great burn on the pecs and shoulders!

Wednesday, 3/4: a beautiful morning outside, near 40 degrees, so I added a mile to my typical route for a total of 6.21 miles, at 9'51" pace

Thursday, 3/5: this fitness blender... which is on my typical rotation for Thursday since it's abs/core day for me, but it always takes me by surprise how difficult it is.  I go in thinking, it's only 24 minutes, and it's all exercises I do a lot, but something about the combination always leaves me dying by the end, and super sore the next day!


It always cracks me up how huge Daniel's feet look in this thumbnail... lol!  Sorry Daniel!

And now the meal plan... I may or may not have bought into the coronavirus hysteria and stockpiled during my trip to the store today.


I'm not panicking or anything, but I figure that if the worst happens and there's some kind of quarantine, or contamination of the food supply (yes, the latter borders on paranoia, I know) we'll be prepared, and if it all blows over and turns out to be nothing, then all this food will keep and we'll eat it anyway.  M agreed that I wasn't crazy.  :)  I think you all already know that I have food hoarding tendencies anyway, and this just gave me an excuse.

Suppers:

Saturday-- leftover beef ragu from the freezer
Sunday-- mac and cheese from the box, green salad
Monday-- subs, chips and strawberries for dance
Tuesday-- beyond burgers, cauliflower tots
Wednesday-- monterey beans
Thursday-- leftovers
Friday-- homemade biscuits with pb/jelly and tea

Breakfasts

eggs
cereal/granola
oatmeal

Lunches

bagels for kids
sub leftovers
mac and cheese leftovers
pbj, sbj sandwiches
salads/shakes

Snacks

hippeas
snap peas
oyster crackers and cheese
tortilla chips and salsa
fresh fruit: oranges, apples, grapes, grapefruit
fresh veggies: carrots, cucumbers, sweet peppers
homemade baked good (probably the yogurt quick bread linked below)
peach and pear cups
applesauce

Extra meals for virus hysteria
(I haven't cooked these meals yet, I just have the ingredients stored in the freezer and/or pantry, although I may assemble some egg mcmuffins this weekend if I get time)
barbecue pork spare ribs
egg mcmuffins (basically scrambled eggs on english muffins with bacon, individually wrapped)
pizza with homemade crust
the yogurt quick bread in this post

I also stocked up on pantry staples like flour (gluten-free and regular), yeast, canned and dry legumes, canned tomatoes, organic canned fruits, oatmeal, cereals, box mac and cheese, and shelf-stable non-dairy milks (like this and this).  Our pantry overfloweth into the towel cabinet!  I also stocked up the freezer with plenty of organic frozen veg.  We are prepared!

Of course the grocery store was out of disinfectant wipes.  Big surprise there.  But we have rubbing alcohol here, so...... we're good.
