Relaxin'

We are doing a whole lot of nothing around here this weekend.

It has been perfect.

Very much needed.  Life has been so busy for all of us lately.

Here are some pics of the {non} action, then the meal plan.

It has been very sunny and hot-- mid 90's on Saturday, which contributed greatly to the desire to do nothing.

We got two beautiful new red rhododendrons for the front of the house and so far they do not disappoint!

If you haven't tried Ben & Jerry's new almond milk ice cream, you should... even if you don't need to avoid dairy.  It's that good.  This rivals Chubby Hubby in my opinion, and that's saying something, if you know me well.

Here's to more relaxing tomorrow!  I hope to stream the PBS Memorial Day concert with the girls and just enjoy some family time.  Happy long weekend all!

Sunday breakfast: banana pancakes (pictured above... THE BEST... a friend of mine gave me this recipe and it's a new family favorite.  I'll share it below!)
Sunday lunch: salad wraps/egg salad
Sunday supper: cookout

Monday breakfast: veggie omelet for Mom, cereal and/or eggs for girls
Monday lunch: Shaklee shake for Mom, chicken sausages, veggies and fruits for girls
Monday supper: spaghetti
(snacks... carrots & peanut butter, cucumbers and hummus)

Tuesday breakfast: overnight oats for Mom and C, cereal for girls
Tuesday lunch: BLT chopped salad for Mom, leftover sausages for girls
Tuesday supper: leftover spaghetti
(snacks... chocolate pb banana smoothie, peppers with hummus)

Wednesday breakfast: veggie omelet for Mom, eggs or protein pancakes for girls
Wednesday lunch: leftover BLT chopped salad; noodle soup for girls
Wednesday supper: Korean grilled chicken breast with veggie foil packets
(snacks... apples with PB, granola with almond milk)

Thursday breakfast: overnight oats for Mom, popovers for girls
Thursday lunch: leftover BLT or Shaklee shake for Mom, leftover noodle soup for girls
Thursday supper: L's birthday dinner! (she requested mac n' cheese :)
(snacks... creamy strawberry smoothie, watermelon)

Friday breakfast: eggs for everyone

...then it's out of town!  Girls are going to Grandma's and M and I are going to a wedding for the weekend!

Oh... P.S. ... the banana pancakes recipe.

5-ingredient Banana Pancakes

1 ripe banana, mashed
2 eggs
1/2 tsp vanilla extract
1/4 tsp cinnamon
1/8 tsp baking powder

Mix all ingredients together (I do it in my Ninja blender... that way I don't even have to mash the banana first).  Spoon 2 tablespoons of batter onto the griddle for each pancake (they are easier to flip if they are small).  They are quite sweet as they are and don't need syrup-- top them with frozen blueberries, fresh strawberries, or other fruit of your choice.

(I quadruple this recipe when making them for the whole family.  They go quickly!!)
