Meal Plan for a Dairy Free Week
Hi all; Happy Monday!
We are having a slow day here... we got some snow this morning (on the first day of spring!) but it has already pretty much melted as temperatures are climbing.
I managed to get everyone dressed by 11 AM this morning and the kids have done no school so far. We just had a nice read-aloud session of Little House on the Prairie and now they are all resting with books in their beds. I'm thinking it may be tea-time and jammies early tonight. We are all still a bit run-down from our trip to DC and then some sickness that visited our household this past weekend. Poor C has been hit the worst... she had another episode of "the spits" this morning as the girls call it. So a "taking it slow" week last week has bled into the beginning of this week.
Sleep is still hit or miss with little J and I'm having trouble feeling the energy or motivation to get back into our regular school routine since our trip. I feel extremely groggy for the first few hours of being awake every day (and sometimes even longer). I think part of it is that I'm not fully recovered from being sick last week, but I can also feel that my body is just craving some good, restful, restorative sleep. I think more regular workouts would help too, but sleep is really the number one thing I'm missing. So, since I don't have total control over Miss J and her sleeping habits, I'm trying to just be patient with myself and everyone, and extend us all a little grace and forgiveness if we're not burning up the charts in the homeschool, workout, or house-cleaning department. Since we only have about four weeks left of material to cover in school this year (even less than that for L who has pretty much finished kindergarten already), we have some wiggle room to take it easy a while.
We have a busy week ahead with me singing at lots of Holy Week services and various appointments (including J's 6-month checkup tomorrow! wow!) and a few make-up classes... so I think I will just focus on getting through all of that. My goals after this week are to get back to regular workouts, finish up school for the year, and try to get J on a more consistent nap schedule during the day (I think this will help her night-time sleep).
In other news... I have been reading quite a bit lately about the link between dairy sensitivity and eczema, and so we are starting a dairy-free stint this week. I hope we can avoid it completely for 3-4 weeks and see what happens. C still suffers despite the fact that we have pinpointed a lot of her environmental allergies and have things much more under control there. Baby J, on the other hand, started itching around 3 months of age, and now that she can use her hands more skillfully she is starting to dig herself to the point of blood. I have read that, for babies in particular, dairy is a common culprit. So Mama is on the bandwagon as well since we are still exclusively nursing. I sure miss milk in my coffee but other than that it hasn't been bad so far. We have cut back a lot on dairy in the past few years anyway.
So here is our meal plan for the beginning of our dairy-free time!
breakfasts
crockpot steel cut oats
eggs (fried in coconut oil as opposed to our usual butter!)
protein pancakes
lunches
hummus roll-ups
homemade guac with veggies and Mary's Gone Crackers
peanut butter and jelly
shakes and salads for Mama
snacks
homemade protein bars
fresh fruits and veggies
leftover snacks from our trip (chia squeezes, kale and sweet potato chips)
suppers
thyme and garlic baked salmon over spaghetti squash
crockpot peanut chicken with soba noodles
grass-fed burgers, sweet potato fries, and caesar salad
healthy corn dog bites with potatoes
leftovers!
