Meal Plan for a Busy Week

We are headed in to a really busy week... girl scout cookies come in today, we will deliver them to M's co-workers on tomorrow, there are Valentines to make and address to our friends (to be delivered at Valentines exchanges at Girl Scouts, Nature School, and C's preschool), we are putting the final touches on N's car for the Powder Puff Pinewood Derby next Saturday, and M is preparing for some activities with his youth group next weekend.  All of that will happen on top of our usual homeschool and weekly activities-- gymnastics for L, tap class for N, ballet for C, preschool, Nature School, and Lego Robotics.  Phew!!!  This is the best kind of busy... I love watching the girls do all the things they enjoy.

Food will actually be a bit simpler this week, since M and I will be participating in a spring reset and doing Life Shakes for two out of three meals per day.  There will still be meals to fix for the girls and snacks for me and M in between shakes but I think it will actually make life a little easier!  It's nice to cut some of the meal planning out on a busy week!  I have been slowly adding more scoops of decaf to my coffee every morning so hopefully I won't have too many withdrawal headaches :)  I'm excited to feel more hydrated and experience the wellness of putting good things in my body.  I'll let you know how it goes!

Here's the meal plan:

breakfasts (for girls):
eggs and toast
cereals

lunches (for girls):
quesadillas
egg salad sandwiches or pbj
fresh fruits and veggies

snacks:
fruits with nut butter
veggies with hummus
rice cakes with nut butter, hummus, or cream cheese
(for the girls... crackers with pub cheese)
ants on a log
chia pudding (still haven't made this one!)

suppers:
baked shrimp with carrots and edamame
baked chicken with street corn and asparagus
broccoli soup with sweet potato biscuits
zucchini pizzas, green salad, pasta for the kids

  1. Enjoy the spring reset! Sounds like you are well prepared. And that busy week is a LOT to balance but somehow I know you've got it all together. Impressive, mama!

  2. Good luck to you and the family with such a busy week! I did see some folks selling Girl Scout Cookies over the weekend...tis the season! Those recipes look great, I never heard of street corn, yum!
