Meal Plan and C Pics

Well, my order from Thrive Market that I placed 10 days ago has still not arrived.  Womp womp.  Apparently there were shipping delays due to the blizzard (stay safe, mid-Atlantic folks!) and an "influx of new memberships and orders".  A lot of folks have New Year's resolutions to eat more health food, apparently.  Not necessarily a bad thing.

So we did a bit of making-do this week with the meal plan, and now that our Thrive Market package is slated to arrive tomorrow, our meal plan is much the same this week as it was last week, since I was waiting on a lot of those ingredients to come.

Here it is!

breakfasts:
whole grain pancakes with nut butter
smoothies
crockpot steel cut oats

lunches:
salads (this week I plan on making one of my favorite salads-- greens, feta, cranberries, slivered almonds, and orange slices, using fresh California oranges that my sister shipped us as a Christmas gift! yum!)
hummus roll-ups
toast with cream cheese
noodle soup
fruits with nut butter; veggies with ranch

snacks:
chia pudding
fresh fruits and veggies
trail mix
smoothies

suppers:
quinoa bone broth stew in the crockpot
roasted veggies over einkorn pasta with vodka sauce
burrito bowls-- rice, beans, avocado, tomato, shredded cheese
baked shrimp with panko bread crumbs, cooked carrots, edamame

I missed out on my "me" post this past week, so that one will come first, sometime this week.

To give you a little bit of a "kid" post along with this meal plan, here's a few pictures, which, if they had been their own post, would have been titled, "In Which C Takes Photos of Self, Sister and Toys at the Library".

  1. Your salads and supper plans look great! That stinks that your package has been delayed. I hadn't heard of Thrive meals, will have to look into it!
