Meal Plan for Vacation Week
Happy Marthon Monday everyone!
I must say I am happy to be cozy at home on this rainy, windy day, and I'm feeling a bit sorry for all of the runners! It reminds me very much of the weather for the Hartford last fall, and although it was still fun, it's not the best running weather for sure!
We had quite a busy (but fun) weekend. I had an early morning run Saturday (outside! in the beautiful weather! hooray!) and then went to the grocery store, and then worked most of the day. Saturday afternoon we went to see our friends and slept over at their house.
The kids had such fun together!! (And grown-ups got some nice chat time after they all went to bed :)
Sunday we all went in to church together. We had to stay the entire two services since I had a solo to sing at the very end. The city was bustling with marathon spectators and runners by the time we left church! We went to Panera for lunch (also very crowded there) and ended up getting home around 3 PM. We were all pretty tired and M and I were both feeling sick-- I'm pretty sure we both were coming down with the virus C had last week. So we all slept a ton last night (from about 9 PM to 7 AM!) and both M and I are feeling better today. M has the day off from work (Patriot's Day) and we are all just relaxing and resting. I have been catching up on work most of the day. Busy times, but my class is almost done for the year! It has been a good day.
Here's our meal plan for the week (no school or activities because it's vacation! wahoo!):
Sunday breakfast: banana flaxseed muffins on the way to church
Sunday lunch: Panera after church
Sunday supper: cereal (easy dinner after an exhausting day!)
Monday breakfast: Curious George pancakes
Monday lunch: quesadillas
Monday supper: chicken nuggets, mashed potato, broccoli
Tuesday breakfast: overnight oats for Mom & Dad, leftover banana muffins for kids
Tuesday lunch: at Ikea
Tuesday supper: broccoli soup
Wednesday breakfast: popovers
Wednesday lunch: turkey or pbj roll-ups
Wednesday supper: leftovers
Thursday breakfast: poached eggs
Thursday lunch: apples with pb, cucumbers & dip
Thursday supper: chicken caesar wraps
Friday breakfast: quinoa granola with yogurt
Friday lunch: Annie's mac for kiddos, salad leftovers for grown-ups
Friday supper: beef enchiladas (or whatever meat is on sale)
Saturday breakfast: spelt/barley waffles
Saturday lunch and supper: various leftovers

Explanation: We have been reading Curious George Makes Pancakes a lot in the past few days... and there's a recipe on the back of the book so we decided to make them this morning. We made them with sorghum and oat flour because that's what I had on hand. They were so good! N ended up mostly making them by herself-- she is getting so capable with cracking eggs, measuring ingredients, and even flipping pancakes. She put the blueberries in them in little smiley face patterns, just like George did! I didn't think to take a picture of mine until they were almost gone :)
