Weekending and meal plan link up

Good Monday, all!
We had an exciting project-based weekend here.  M and I spent Saturday morning over coffee formulating a plan for complete demolition of all the overgrown 50-year-old shrubs in our yard.  We mapped out a diagram (while the girls patiently played in the playroom) and we're going to start from scratch with some plants we actually like. M started work on the project Sunday (ripping out shrubs with nothing but an ax and his bare hands!) and it's going to be ammmaaaaaazing when it's all finished.  I am so sick of looking at our front yard the way it is and can't wait to have everything out.

The before pic... not a true "before" because by the time I took the picture, M had already taken out a barberry that was in between the "Christmas Tree" shrub (as we call it) and the smaller shrub to the left of it, plus yanked out a whole bunch of dying rhododendrons and overgrown daylilies from the bed under the left-most window.  Yeah.  This is already an improvement.  "After" pictures coming soon!
The weather was gorgeous.  A bit on the hot side Sunday but really not bad.  I did a hot 5-mile run Sunday afternoon and only felt slightly queasy coming up the last set of steep hills (there are just no easy runs in our neighborhood!)

C is still a bit timid about the slide itself but she got her feet wet anyway.

N helped me weed the garden yesterday while her sisters napped, periodically taking rests in her ducky chair...

A project-based weekend for sure, but we had lots of fun with our girls too.
My detailed meal plan really worked for keeping me organized last week, so I'm linking up again!

Sunday
Breakfast: Banana Custard Oats (didn't get made last week!)
Lunch: Egg and tomato sandwiches on sourdough; smoothies
Supper: Poached Salmon (like last week) with quinoa risotto and roasted brussels sprouts

Monday
Breakfast: Overnight Pumpkin Pie Steel Cut Oats (repeat... loved them so much we're doing it again!)
Lunch:  Beach picnic with friends!  Apple slices with green pb dip (didn't get to this last week); garlic hummus roll-ups with cheese
Supper: Leftovers

Tuesday
Breakfast: Leftover Banana Custard Oats and Steel Cut Oats
Lunch:  Scrambled eggs and fresh fruit for kids; green salad for Mama
Supper: Broccoli Soup (subbing in spinach & kale from our garden), sweet potato biscuits

My first spinach harvest from the garden last week; there's lots more out there ready to go!
Wednesday
Breakfast: Poached Eggs
Lunch: (possibly with friends?) Cheese quesadillas, carrots and cukes for kids; green salad for Mama
Supper: Bean Bacon Burgers, roasted potato wedges

Thursday
(laundry and packing day... getting ready for our anniversary trip!)
Breakfast: Soaked Baked Oatmeal (also planning to take this as a snack on the road the next day)
Lunch: Yogurt with dried fruit and almond butter/jelly sandwiches for kids; green salad for Mama
Supper: Leftovers

Friday
Breakfast: Whole wheat popovers; yogurt with dried fruit
Lunch: Fun 4th of July family activities; Grandma is bringing our picnic lunch!  Thanks!
Supper in CT, dropping the kids off before our anniversary trip!

Saturday
In CT!!

Lastly, a random picture of C for you... she found her winter hat in the closet and insisted on wearing it to the library the other day.  It was almost 90 that day.

  1. I need to remember egg-tomato sandwiches for lunch- such a yummy combo! Summer makes for some fun outdoor playing. And how exciting on the landscaping- we have a lot of outdoor projects to get to, also!

  2. Your meals sound fantastic! I love home grown spinach :) Well, anything from the garden, really. We currently have loads of leafy greens, and I'm so excited to use them up.
