Supper Tonight: Spaghetti with Meat Sauce
This is my Mom's recipe. I can remember eating this all the time as a kid; it was a favorite of just about everyone in our family. I can see why Mom made it so often... it is so simple to put together, and what kid doesn't love spaghetti? My girls do!
1 medium onion, chopped
2-3 cloves of garlic, minced
3/4 pound ground beef (I usually use ground turkey)
2 links of Hot Italian Sausage
2 24-oz jars store-bought spaghetti sauce-- plain marinara
1 14-oz can diced tomato (My Mom used to use canned tomatoes from our garden... yum!!)
1 tsp basil (fresh if you've got it)
1 tsp oregano
1 bay leaf (Our family always used to try to guess who would end up with the bay leaf on their plate. It was always my Dad, for some reason. I think he cheated. :)
Remove the skins from the sausage and saute with the ground beef, onions, and garlic until browned and crumbled. Drain off any grease from the meat. Add the jarred sauce, diced tomatoes, and seasonings. Simmer for as long as you want, then serve over your favorite pasta, with a fresh green salad and/or garlic bread.
(2 hours is a good amount of simmer time for flavor and breaking down the larger tomato chunks... but sometimes if I wasn't able to get it started ahead of time, I serve it right after I assemble it, and it still tastes pretty good.)
You can also assemble this the night before and let it stew all day in the crockpot. Instant dinner!
