Supper Tonight: Loaded Baked Potatoes

This recipe idea came from the Tightwad Gazette.  Amy Dacyczyn included it as part of an article on ideas for cooking with potatoes, a cheap and nutritious food.  Did you know that potatoes are a great source of vitamin C and potassium, and they even have a little bit of iron?  I didn't know that until I read this article.  So, here ya go:

Loaded Baked Potatoes

Russet or other baking potatoes
Broccoli
Cheese sauce (see recipe below)
Any of your other favorite baked potato toppings (sour cream, bacon, etc.)

Coat the potatoes in a tablespoon of oil or butter and wrap in foil.  Bake at 400 for 45 minutes to 1 hour.  Steam the broccoli and make the cheese sauce.  Top your potato to your liking, and enjoy!

Cheese Sauce

2 T butter or oil
2 T flour
2 cups milk
2 cups shredded cheddar cheese

Melt the butter or heat the oil in a small saucepan.  Stir in the flour, and then whisk in the milk.  Cook and stir over medium heat until slightly thickened.  Add cheese and stir until melted.  (Yes, this is a basic white sauce with cheese added.)

This meal wins points in the categories of "quick", "nutritious", and "kids like it".  I can get this meal ready in ten minutes if I remember to throw the potatoes in the oven ahead of time.  If I forget, I just boil them instead of baking.  N is a big fan of this meal.  She was a member of the "clean plate club"!  For some reason, she doesn't dig the cheese sauce, but she loves the broccoli (we call them "trees") and eats her potato with a little salt and pepper.  L will eat her weight in "trees", but is not a big fan of potato just yet.  We're working on it!
