Supper Tonight: Tomato Soup and Caesar Wraps
I thought I would start a series of posts entitled "Supper Tonight" in which I will record meals that were a hit here at our house-- meaning that either the kids loved it, it was quick and easy, frugal, or super healthy. My goal is to regularly be cooking meals that fit ALL of these categories, so I'm hoping that recording them as they come will give me something to refer back to when I'm feeling low in the cooking creativity department.
So here's our supper tonight. We've had both of these recipes as separate meals, but never combined them before, and I think together they made quite a well-rounded meal. N loves the Caesar Wraps, and L is a huge fan of tomato soup, so this meal provides both of them with a food they really love.
Here are the recipes:
Cream of Tomato Soup (from the More With Less Cookbook)
2 T margarine or butter
2 T finely minced onion
3 T all purpose flour
2 t sugar
1 t salt
1/8 t pepper
A dash each of garlic powder, basil, oregano, & thyme
2 cups tomato juice
2 cups cold milk (to make it extra creamy, I use 1/2 cup half and half and 1 1/2 cups skim milk)
Saute the onion in the butter until tender. Stir in the flour, salt, sugar and seasonings and remove from heat. Gradually stir in tomato juice, then bring to a boil, stirring constantly. Stir hot tomato mixture into the cold milk. Heat almost to boiling and serve.
(In the cookbook there is an option to "thicken the soup with doodles"-- 2 eggs, 2 T water, 1 t salt, and enough flour to make thick batter, combine and drop by teaspoonfuls into soup, cover & turn off heat. I've never done this, but it sounds fun!)
Caesar Wraps
1-2 chicken breasts (if we're feeling vegetarian or tight on the grocery budget, we omit the chicken)
2 T Italian dressing
romaine lettuce
other veggies of your choice (tomato, celery, cucumber, shredded carrots)
croutons
Caesar, Ranch or Italian dressing
wraps of your choice, we use whole-wheat tortillas
Cut chicken into bite size pieces and saute in the Italian dressing. Chop the romaine and other veggies to make a salad. Serve chicken on wraps topped with salad, croutons, and dressing of your choice. Roll up and enjoy!
So simple, super frugal, fairly quick, and tasty for all family members. Win!
