St. Patty's Day
Last night we invited some people over and had this crock pot corned beef recipe along with this Irish Soda Bread recipe:
3 cups all-purpose flour
1 1/2 cups whole wheat flour
1/2 cup Quick cooking oatmeal, they suggest McCann's Irish but you can use any kind. Plus extra for top of loaf.
1/3 cup Steel-cut Oatmeal
2 1/2 teaspoons baking soda
1/3 cup of sugar
1/4 cup cold butter, cut into small pieces
2 1/4 cups buttermilk
Preheat oven to 425 degrees. Dust a baking sheet with flour. In a large bowl, stir together flours, oatmeals, baking soda and sugar. Using pastry cutter or fingers, work in butter until mixture resembles coarse crumbs. Make well in center, and with wooden spoon gradually stir in buttermilk until soft but manageable dough is formed. Turn dough out onto lightly floured work surface and knead about 1 minute. Shape into a ball and place in center of prepared pan. Flatten dough into circle about 1 1/2 inches thick. With sharp knife that has been dipped in flour, make a cross through center of bread so that it will easily break into quarters when baked (do not cut all the way through). Sprinkle top with a little oatmeal. Bake 30 to 35 minutes (check after 20 minutes, and if browning too quickly, reduce heat to 350) or until nicely browned and tester inserted in center comes out clean. Makes 1 loaf.
I am munching away on the leftover Irish Soda Bread today and I can't get enough! So I'm recording the recipe for future celebrations.
Of course we were crazy with kids during our celebration so I didn't take pictures. But we sure had fun! Hope you did too!
