Recipe Extravaganza!

I've been wanting to share some recipes here.  Believe it or not, even with three kids I've found time to make things.  I'm so glad.  I love making things.  :-)

Snacks we've been enjoying:

Peanut Butter Breakfast Pudding.  My friend Sarah recommended this on her blog a while back.  This nursing Mama needs a hearty breakfast, and this one has been my favorite lately.  (I add extra vanilla, because I love vanilla, and sweeten mine with a little honey.  Yum.)

My mother's simple smoothie recipe: 1 cup yogurt (we use vanilla yogurt... again, I love vanilla), 1 cup orange juice, 1 cup frozen blueberries, and 1 banana.  Blend.  Enjoy.  (P.S. I love smoothies because you can sneak things into them for the kiddos... like flaxseed for my daughter with regularity issues...)

Nourishing Protien Bars.  These are delicious and addictive.  Beware.

Apples with peanut butter.  So simple and so wonderful.

Have you tried these cinnamon almonds?  I found them at our grocery store the other day.  The girls really like them too.  Apparently, I found as I was googling this, you can make your own.

Meals we've been enjoying:

Our homemade pizza is always a go-to recipe.  Pretty simple... good when you have a new baby around.  Last night I was making pizza and L wandered into the kitchen, saying "I want to eat."  I replied, "Supper's almost ready, we're having pizza and salad."  She said, "Pizza and salad.  Just my style."  Pizza is always a hit!

I've been making the homemade granola recipe from The Tightwad Gazette for our breakfasts.  I've used this recipe for years because it is very quick to make, and doesn't have the long list of ingredients that lots of granola recipes have (a good time-saver when you have a new baby around).  Sometime when I've got more time I'd like to seek out an alternate simple recipe with a little less sugar.  For now I'm settling for adding a few healthy things to the dry mixture (like flaxseed or wheat germ).  I need to dig out my More With Less Cookbook because I know there are lots of great (low sugar) homemade cereal recipes.

I have really been utilizing Passionate Homemaking as a great recipe source.  This lady is great at putting a healthy spin on comfort food.  Here are our favorites from the past few weeks (some of these I made for my freezer cook a few weeks back, and some of them I've made since C was born):

Shepherd's Pie

Chicken Divan

Chicken and Dumplings

Tuscan Style Potato Soup

I'm going to try the Zuppa Tuscana later this week.  Yummy!

Happy cooking, everyone!

  1. so glad you tried the pb breakfast pudding and liked it, too! I'm a little addicted to it right now. Those nourishing protein bars look good... I'll have to try making them soon! And I love smoothies... you can even sneak spinach into them.
