Tuesday Recipe
This one is another MWL. We just had it for supper last night, and it's one of our favorites--even for those in our family who are not big fans of tomatoes. It's a nice high-protein meatless alternative to legumes, which we've been having a lot lately. It's not as low in fat as some of the other bean recipes, but I figure we can afford an occasional splurge in that department. And it's pretty quick and easy, especially if you cheat and buy a frozen pie crust from the store, like I sometimes do. I made one from scratch last night, and even with that, the entire recipe took me about 25 minutes to prepare.
Preheat oven to 375. Prepare 1 9-inch pie shell (or remove your frozen one from the freezer). Bake for 10 minutes. Place in pie shell:
2 cups chopped or sliced tomatoes
Sprinkle with:
1/2 t. basil
1 t. salt
1/8 t. pepper
1/2 t. sugar
4 scallions, chopped
Spread over tomatoes:
1/2 cup grated Swiss cheese
1/2 cup grated cheddar cheese
Combine:
2 eggs, slightly beaten
2 T. flour
1 cup evaporated milk
Pour over cheese and bake at 375 for 40-45 minutes, or until set. Cool 5 minutes before serving.
P.S. Since we began our meatless cook through the More With Less cookbook (and I've cut back on a lot of impulse buying in the grocery store) we've saved roughly $150-$200 per month on our grocery bill. Yay!
