Sunday Recipe (x2)
First of all, thanks for all the comments on last week's recipe... it's great to know there are other MWL fans out there! We've been continuing on our journey of MWL meals every night and it seems we've really liked every single one. My favorites recently have been Honey Baked Lentils and Golden Eggplant Casserole. Yum!
The two recipes I'm sharing this week are not MWL, but a couple of other "tightwad" recipes I came to love in the early years of our marriage.
Recipe #1:
Homemade Pizza Crust
(I recently made up a couple of batches of this and froze them together with cheese and sauce for "frozen pizza kits." They've proven to be quick dinner alternatives to take out or store-bought frozen pizzas.)
2 1/2 cups flour
1 package yeast (2 1/4 tsp)
1 T sugar
1 t salt
3 T oil
1 cup warm water
Mix the yeast, salt and sugar with 1 cup of the flour. Pour in warm water and oil and stir well. Mix in remaining flour, just enough so that dough is the correct consistency. (The recipe says to let the dough rest for 10 minutes here, but I usually don't if I'm pressed for time. I don't know how this effects the dough, but it's always tasted good to me.) Turn the dough out on a floured surface and knead 5 minutes or until dough is smooth. Roll out dough into a circle. Sprinkle a pizza pan with cornmeal and stretch dough out over pan. Top with your favorite ingredients and bake 20 minutes at 375.
You can also substitute whole wheat flour for some or all of the flour.

Apple Oatmeal Bars
This recipe comes from The Tightwad Gazette. It's a great, quick way to use up those bruised, mealy apples you have hanging around. Or, if you're like me and you're not squeamish, you can use all the apples that your toddler took three bites out of.
1 cup oatmeal
1/2 t salt
1/2 cup butter
1 cup flour (I use whole wheat flour)
1/2 t cinnamon
2 1/2 cups chopped apples
1/2 cup sugar
Combine the first five ingredients (I blend with a pastry blender) and pat half of the mixture into an 8x8 inch pan. Layer on apples and sugar. Crumble remaining oatmeal mixture on top. Bake 35 minutes at 350 degrees.

(Unrelated to the recipes: Saturday morning is pancake morning in our household. Yesterday N suggested blueberry pancakes since she has been reading "Blueberries for Sal" a lot this week. M, our pancake chef, got out the frozen blueberries... and N channeled Sal by eating almost the entire bag of blueberries in addition to her pancake. She seriously ate probably two cups of berries. Here's some pictures of the aftermath.)
