Workout Recap and Meal Plan (with a new cookie recipe)

Hi everyone!

I'm several days late posting the meal plan/workout recap, and we're in the midst of a homeschool day here, but I while everyone is occupied for the moment I'll pop in quickly here and get it posted.

Workout Recap:

Friday, 4/17: 6.82 miles outside with my running friend, 9:45 pace

Saturday, 4/18: rest day

Sunday, 4/19: 9.05 miles outside with my running friend, 9:52 pace

Monday, 4/20: this Fitness Blender upper body workout; I wanted to do one that was just strength and no cardio, to give my legs a good break.  This was a good pick!

Tuesday, 4/21: 6.91 miles outside with my running friend, 9:48 pace

Wednesday, 4/22: full rest day... felt super tired.

Thursday, 4/23: 6.8 miles outside with my running friend, 9:49 pace

And the meal plan for this week!  I again shopped for two weeks, so we will repeat the meal plan next week.  We're already several days in!

saturday-- leftovers
sunday-- mac and cheese, salad
monday-- subs, chips, strawberries (smoothies week 2)
tuesday-- pulled pork sandwiches, corn, sweet potato fries (veggie burgers week 2, or leftover pork)
wednesday--  corn dogs, salad and slow cooker chili
thursday-- leftovers
friday-- homemade pizza or brinner from the freezer

salads/shakes

~breakfasts~
cereal/granola
oatmeal
eggs
crockpot steel cut oats
homemade waffles/pancakes

~snacks~
hippeas
snap peas
made good bars
oyster crackers and cheese
tortilla chips and salsa
fresh fruit: grapes, apples, bananas, grapefruit, clementines, strawberries, pineapple
fresh veggies: carrots, cucumbers, celery, sweet peppers
peach and pear cups
applesauce
homemade baked good (we made Anzac Biscuits!)


Perfect to enjoy with your afternoon coffee while helping with preschool.
