Meal Plan and Post-Vacation Workout Recap

Greetings, friends!

We are back from sunny Florida, and it was simply wonderful.


We had a beautiful spot with a beautiful view, and it was warm enough that these brave New England girls were able to go all the way in swimming multiple times.

As usual on Friday, I'll recap my workouts from the trip, but I'll also share a few photos of the days as I do so!  Here goes...

Friday, 2/14... 5 miles on the treadmill, didn't track my pace (we had had another Thursday snowstorm here in MA so the treadmill helped me avoid icy sidewalks)

Saturday, 2/15... this fitness blender workout as we were doing our last packing, before getting on a plane for three hours!  Our flight left at 6:45 PM so we had the morning to finish packing and clean up the house.  It made for a late arrival to our destination but it was nice to have the extra time to get ready!


My glutes were sore for a few days after this one!

Sunday 2/16... "rest" day... but we went swimming and met my cousin, his wife and kiddos for lunch!




L wanted to come back late in the day and we had a quick walk as a storm was gathering...


Monday 2/17... sunrise run on the beach! (L joined me for the first mile!)



I ended up doing just over 5 miles (11'15" pace)... the beach was endless!

Tuesday, 2/18... M and I did this kickboxing workout before gathering with our family who live in Florida-- my grandparents, aunt and uncle, and cousin!


We had lunch together-- grilled out burgers and dogs, with some delicious blueberry cake for dessert!  Such fun times with wonderful people.

BTW my shoulders were super sore after that kickboxing workout... recommend it for a good sweat!

We went to an amazing Spanish restaurant in old St. Augustine called Columbia for dinner, to celebrate my sister and my brother's birthday.  If you're ever in that area you must try it!  The most delicious tapas and flan I've ever tasted!!

Wednesday, 2/19... rest day... we slept in a bit, had cake to celebrate the birthdays


and went to visit the dolphins!




We ordered sushi for lunch and had a final goodbye swim.



Thursday, 2/20... rest day
We left for the airport at 5:15 AM, before any of my family was awake.  We had to wake the girls up at 4:30  :(  It was a long day of travel but we made it back with much coffee


(Someone took the safety demonstration very seriously)


We spent the afternoon when we got home just vegging out... the girls went to bed at 6:30 PM and M and I were asleep by 8!  We had a lot of late nights and busy, active times... what a wonderful week.  We miss our family and the beach already.

Here's the meal plan for the week!

Suppers:

Saturday-- red lentil curry stew in this post with ramen for kids; leftover bagged salads
Sunday-- mac and cheese from the box, salad
Monday-- packed subs for gymnastics, chips and strawberries
Tuesday-- crockpot braised beef ragu and polenta with roasted broccoli
Wednesday-- savory baked limas and healthy corn dog bites, veggies and hummus
Thursday-- leftovers
Friday-- make your own pizza

Lunches:

Bagels for kids
Leftover Subs
Dinner leftovers
pbj/sbj
salads and smoothies

Breakfasts:

Leftover homemade waffles (we made a big batch tonight for dinner!)
cereal/granola
oatmeal
eggs

Snacks:

hippeas
snap pea crisps
made good bars
cheese and oyster crackers
fresh fruit: grapes, strawberries, clementines, apples, grapefruit
fresh vegetables: carrots, cucumbers, peppers, with hummus
peach and pear cups
leftover muffins from the freezer
leftover coffee cake
possibly 2-ingredient donuts if we get time to make them!
