More of Lately

I have a minute while we're waiting for our car to be inspected and Miss J is enjoying some apple juice, Cheez-Its, and Sesame Street in the waiting room!

Let's continue with the iPhone photo dump and updates on what we've been up to!

I seem to have a lot of food pictures of late.  I guess we've been enjoying some yummy things lately!

Oatmeal Bake with steaming mugs of coffee on a chilly morning!  (We love these new mugs that Zach and Piper got us for Christmas!)

On the cold dark nights of winter, we like to do movie nights.  It looks like this night we enjoyed our black bean soup with cashew sour cream and avocado whilst we watched!

This was a spaghetti squash burrito bowl with Newman's Own Peach Salsa (my FAVE), more cashew sour cream, and a generous serving of guacamole.  😍

I went on a buttered toast/chickpea salad toast kick for lunch, apparently.

That Ezekiel Bread just makes the most delicious toast, no???

And more for breakfast, with some fried eggs, after a tough workout the following morning.

This one I definitely just took a picture of because I wanted to remember it and make it again!  Honey mustard salmon, coconut quinoa and roasted veg: brussels, butternut squash, and red onion.  Sounds complicated but it actually came together in about 25 minutes.  Fish cooks so quickly and it's soooooo good :)

On the subject of food, I have to sing the praises of the yumboxes that my sister got the girls for Christmas.  They are leakproof, super cute, dishwasher safe, and they have cut our plastic baggie use down by at least 80%.  Yay!

Moving on to non-food news :)

A few March snowstorms made for some fun sledding and our first snow day of the winter!  It has been pretty nice that the first winter commuting with the girls to school was not terribly bad.  We were glad to get the one snow day, but also glad we won't be in school until July 4!

Snow plus March sunshine equals beautiful, warm-ish, sun-drenched walk to the apple orchard the other Saturday.  The spring light always feels so wonderful, doesn't it?

Testing out hairstyles for my sister's wedding coming up next weekend!!!!
