Meal Plan and Spring Stuff

 A couple of awesome spring-time things about today:

1) My children consumed an entire watermelon today.  Like, an entire, big, watermelon.  Must have been one of the first ones of the season, because it was good.

2) I happened upon L cupping a dandelion in her hands, exhaling on it repeatedly.  I asked her, "What are you doing?" and she replied, "I'm making sure it has enough carbon dioxide so it will never die!!!"

...and a few pics from a chilly and raw spring hike that we took last Friday afternoon.  April showers bring May flowers, right???

breakfasts

applesauce muffins
carob muffins
whole grain pancakes
stove top oatmeal

lunches

chicken salad over greens
pbj
hummus & pita chips, veggies & guac

snacks

banana quickbread
fresh fruits and veggies
snap pea crisps
kale chips (homemade)

suppers

lentil meatballs with black bean pasta and marinara
quinoa crockpot stew with caesar salad
dairy-free pizza
fish with roasted vegetables
