Post-Easter Meal Plan

So... Holy Week happened, and all of the violin playing and choir singing that went along with it.  It was all meaningful and celebratory and fun, but I must say I'm exhausted.

And I got really behind on work for my class while doing all of that music-making.  Last year Holy Week was later in the course year, meaning that I had much less grading to do in between all the services.  Not so this year.  I'll be playing catch-up in a major way until this week's grade deadline tomorrow night.

But life is good and we had a sweet and wonderful Easter weekend with family.

Just gonna put up a few pics of our goings-on and then the meal plan.

Saturday we brunched with Auntie Bethie and Uncle Adam, and Grandma H.  The girls enjoyed some wonderful new books from Grandma and played with the Easter window clings that she brought for the rest of the afternoon!


Easter baskets were left right by the door Saturday night (C's idea) so the Easter Bunny would not miss them.


I was sure that we would not get to see the girls opening their Easter baskets, since M and I had to leave for church at 6 AM, but guess who was awake.............. everybody.


We have been obsessed with Lego Friends lately and the Easter Bunny definitely delivered.

Mama and Daddy left for our three services of music-making at church in the city.  The girls stayed home with Leslie and went to one service at her church, and the egg hunt afterwards.  Much fun!  Thank you Leslie!

Mama and Daddy returned home at about 1:30, and then Zach, Piper, Grandma and Grandpa came with more Easter baskets!






I took the easy/lazy pregnant woman route and ordered Boston Market for our Easter dinner.  It was yummy!  We went out for ice cream afterwards to top off the perfect afternoon.

Sunday breakfast: pumpkin baked oatmeal
Sunday lunch: snacks on the way home in the car
Sunday supper: take-out from Boston Market with family for Easter!

Monday breakfast: leftover oatmeal bake
Monday lunch: apples with nut butter; cucumbers w/ranch, cheese cubes
Monday supper: chicken sausages, leftover quinoa, roasted asparagus

Tuesday breakfast: oven pancake
Tuesday lunch: turkey roll-ups and smoothies in the car between activities
Tuesday supper: spaghetti squash with tomato puree and frozen meatballs

Wednesday breakfast: poached eggs
Wednesday lunch: more turkey roll-ups and smoothies
Wednesday supper: leftover lentil soup (noodle soup for girls); cornbread

Thursday breakfast: smoothies and toast with nut butter
Thursday lunch: more leftover soup and cornbread
Thursday supper: leftovers

Friday breakfast: spelt/barley waffles
Friday lunch: various leftovers from the week
Friday supper: fish tacos

Saturday breakfast: leftover waffles
Saturday lunch and supper: various leftovers
