Catching up, and Meal Plan

Howdy folks!

I'm coming off of a very restful week for me-- after Monday night and feeling so poorly I really tried to take it easy in the next few days.  I slept in every day this week and skipped all of my morning workouts, and catching up on rest was really helpful.  We really racked up a sleep debt during our week in Florida with the kids waking up coughing in the night, and looking for the bathroom in strange places!

Wednesday we just focused on school and laundry and didn't go anywhere (and didn't get out of our pjs until after noon!!).  Thursday Auntie Bethie was able to help me with the girls for a while so I went to Starbucks and got a ton of work done (the girls had a blast having pizza with her and watching Big Hero 6!).  Then Friday my Mom came so I could head to my doctor's office for an early risk assessment.  It turns out that either I am a bit further along than we originally suspected, or our baby was just measuring a little big that day, but the results of the test were inconclusive because they weren't able to take the measurements they needed.  The test needs to be done in the pregnancy between 11 weeks and 13 weeks 6 days, and I guess I'm about 14 weeks along, or that's how the baby was measuring anyway.  So although we couldn't get official test results, they unofficially reassured me that everything looks healthy, and I got some cute pics of the babelet anyway!

I saw my first 3D ultrasound out of any of our kiddos:



I'm not sure how I feel about the 3D ultrasound... mildly creepy... but at least you can see another shot of the thumb sucking, and baby's other hand up by the face.  Super cute!

Still too early to tell the gender, for those of you who are dying to know...

Mom had taken the girls to their afternoon geography class because I wasn't going to be back home in time after the appointment, so I actually had 30 minutes to just sit at Panera, have a salad, sip lemonade, and catch up on email.

Two days in a row of time to myself!  I am so spoiled!

Whenever I have time like this to catch my breath and think for a minute, I end up doing a lot of self-evaluating and planning for the future, so it has been an introspective week too.  I've been feeling particularly overwhelmed and worn down lately with the pregnancy, and so I'm giving a lot of thought to what I can handle as the new baby comes, and how I can be the best "me" for my children, my husband, and my friends and family.  Anyway, more on that later, if I find myself with the time to blog-ramble at any point.  :)  Right now it's back to grading for me.

Here's our meal plan for the week:

Sunday breakfast: soaked baked oatmeal
Sunday lunch: salads and sandwiches in the car
Sunday supper: baked haddock with alfredo sauce, quinoa pasta, and roasted veggies

Monday breakfast: leftover oatmeal bake
Monday lunch: scrambled eggs and fruit
Monday supper: slow cooker bbq spareribs, quinoa, steamed broccoli & cauliflower

Tuesday breakfast: raw buckwheat breakfast porridge or cold cereal
Tuesday lunch: packed sandwiches between activities
Tuesday supper: leftovers

Wednesday breakfast: leftover porridge or cold cereal
Wednesday lunch: apples with nut butter, cheese cubes, cucumbers
Wednesday supper: crockpot lentil and chicken sausage soup

Thursday breakfast: overnight oats
Thursday lunch: leftover lentil soup
Thursday supper: black bean burritos

Friday breakfast: oven pancake
Friday lunch: more leftover soup
Friday supper: leftovers

Saturday breakfast: various leftovers-- probably eggs
Saturday lunch: salads, quesadillas
Saturday supper: make-your-own flatbread
