Relaxed week and meal plan
Well hello, readers.
Sorry for the long break there. It wasn't a busy week; on the contrary, we got our three feet of snow on Tuesday and had a couple of days' break from activities as a result. It was a slow, relaxing week, and I sort of unplugged except for my work in my online class-- not for any reason, really, other than that the girls and I had some housebound time to do some fun non-technology activities, like finger knitting, play-doh, and reading The Long Winter (very appropriate for our snowy week!).

Our relaxed week was followed by a relaxing weekend-- M and I attended our church choir retreat at a camp in rural CT, where we sang all weekend and played games by the fire with our fellow choir peeps. The girls stayed with Grandma and Grandpa who didn't live very far from the retreat center at all. Super relaxing for all!
Because we did spend so much time relaxing, and because internet access was spotty in the CT woods, I'm a bit behind on my grading deadlines for the week. So I've got a lot ahead of me tonight, and I must get back to that, but I'll put our meal plan up quickly first.
(P.S. This is post-a-day February here at Sugar & Spice, and although I've already missed the first day, I'm going to try and be back here at least once a day for the next 27! So check in often!)
Monday Breakfast: steel cut oats in the crockpot
Monday Lunch: rolled up turkey and cheese, cucumbers & fruit
Monday Supper: rosemary and orange-glazed chicken
Tuesday Breakfast: leftover steel cut oats; other breakfast leftovers
Tuesday Lunch: packed sandwiches in between activities
Tuesday Supper: leftovers
Wednesday Breakfast: scrambled eggs and fruit or smoothies
Wednesday Lunch: Annie's mac for kids; salads for grown-ups
Wednesday Supper: homemade pizza on soaked crust
Thursday Breakfast: banana millet muffins
Thursday Lunch: quesadillas and smoothies
Thursday Supper: lentil burgers from the freezer with roasted potatoes
Friday Breakfast: leftover muffins or cold cereal
Friday Lunch: packed sandwiches in between activities
Friday Supper: leftovers
Saturday Breakfast: cold cereal before the Girl Scout cookie booth
Saturday Lunch: various leftovers from the week
Saturday Supper: more leftovers!

Those unexpected days off that inspire us to just let go and be present in the moment are so wonderful aren't they? Looks like last week was a wonderful week and I hope you get all caught up, good luck with the cookie booth, I remember those days!
