Weekending and Meal Plan
Our weekend so far...
The joys of dress-up.
Lest you think our children never squabble or tease or boss each other...
Oh but they do.

M did the activities from our library's solar system kit with the girls Friday night... crater-making with sand and marbles, measuring planetary distances with string, etc. He added a simulation of the comet landing since the girls have been really interested.
A cooooold 8-mile run yesterday... the high here was 41. It was about 38 while I was running, but I felt great! The quiet... the slanted light... the wind whispering through the trees without any leaves... a wonderful moment of peacefulness. Thanksgiving weather is here and I'm loving it!
I came home from my run, warmed up in the shower, and the stars aligned... C slept for 3 hours and L took a quiet rest time in her bed for almost 2 hours while Daddy took N to a special exhibit at our local art museum. I made two loaves of gluten-free bread maker bread (perhaps not as nutritious as I would like, but easy to digest and certainly tasty, and WAY cheaper than store-bought GF bread!). I made some "gingerbread coffee"
(Simply sprinkle cinnamon and ginger over your coffee grounds before starting up the pot. Did you know ginger reduces inflammation? Sort of justifies my post-run cup of coffee. Sort of.)
Then I cleaned out my bedroom closet, filled two bags for Goodwill, and organized all of our linens.
Time for that sort of thing NEVER happens around here. It was the greatest afternoon ever.
Here's the meal plan! I'm sort of repeating last week... it worked so well with our schedule, and there were a couple of meals that I didn't end up cooking.
Sunday breakfast: soaked baked oatmeal
Sunday lunch: leftover tofu quinoa in the car on the way home from church
Sunday supper: dinner out at Uno's for preschool family night
Monday breakfast: leftover oatmeal bake
Monday lunch: scrambled eggs and fruit
Monday supper: curried cauliflower soup and paleo sweet potato biscuits
Tuesday breakfast: banana custard oats
Tuesday lunch: packed quesadillas and smoothies for preschool lunch bunch, salads for grown-ups
Tuesday supper: spaghetti squash pizza bake (again... we loved it so much last week!)
Wednesday breakfast: steel cut oats in the crockpot
Wednesday lunch: at Grandma's
Wednesday supper: leftovers
Thursday breakfast: leftover steel cut oats and banana custard oats
Thursday lunch: packed sandwiches for girls (homeschool activities), salad for Mama
Thursday supper: garlic shrimp with white beans and tomatoes
Friday breakfast: protein pancakes
Friday lunch: fruit and yogurt dip, veggies and hummus
Friday supper: leftovers
Saturday breakfast: waffles
Saturday lunch: various leftovers
Saturday Supper: grass-fed burgers and roasted potato wedges
I also have four pizza crusts in the freezer, so if we're short on leftovers I may throw in a homemade pizza on one of those nights.
