What an amazing holiday we had.  So thankful.

Here's our meal plan!

Sunday Supper: whole grain blender waffles (with millet and kamut)

Monday Breakfast: leftover waffles or leftover banana custard oats from last week
Monday Lunch: scrambled eggs and fruit
Monday Supper: Sorghum, black bean and feta salad with cucumbers, greens and balsamic (I'm improvising this recipe using up things we have in the cupboard!)

Tuesday Breakfast: cornmeal mush
Tuesday Lunch: quesadillas and smoothies for girls, leftover chickpea salad for Mama
Tuesday Supper: leftover beef bourguignon from last week

Wednesday breakfast: leftover mush and/or cold cereal
Wednesday lunch: turkey wraps with lettuce, tomato, cucumbers, carrots etc.
Wednesday supper: leftovers

Thursday breakfast: poached eggs
Thursday lunch: chicken noodle soup made with bone broth, pita chips and hummus
Thursday supper: monterey beans and rice

Friday breakfast: protein pancakes
Friday lunch: various lunch leftovers from the week
Friday supper: homemade pizza with soaked crust from the freezer

Saturday breakfast: leftover protein pancakes or other breakfast leftovers
Saturday lunch: salads and smoothies
Saturday supper: leftovers

  1. Sounds perfect- I'm so glad you had such a good holiday! It's so nice to slow down and take a break from everything. We really enjoyed it too.
