Heigh-ho, heigh-ho... meal plan
I'm in the midst of the first week of grading for my online students (yes... heigh-ho, heigh-ho, it's back to work I go... ha). Things are going really quickly! Hooray! I have time to quickly post my meal plan and workout recap before the baby-sitter leaves!
What's that you just said??? Baby-sitter??? Yes, M and I now have a regular Sunday-evening baby-sitter. Crazy, right? Are we self-indulgent or what? Actually, not really. This is the best idea ever. Yes, it does give me a few tightwad guilt feelings about hiring a baby-sitter at a time when both M and I are technically "home", but it's so nice to have a chunk of free time I can depend on to work every week, and M is enjoying the time to catch up on businessy-home tasks like paying bills, budgeting, mowing the lawn, laundry, or whatever is needed. We can now enjoy the girls more freely during the rest of the weekend, since we know we will have this time to do any task that needs to be done. And our baby-sitter is tons of fun and so we know the girls are having a blast. So there's not actually that much guilt.
So, it's back to work for me, but things should be much less hectic this year since I have this bit of child care, as well as another one on Thursday. I also have less students. Hooray!
I'm doing a kind of fridge and pantry clean out for this week's meal plan... we have lots of bits and pieces hanging around, so lots of leftovers on the menu (and some meals we didn't get to last week):

Sunday lunch: PBJs in the car on the way home from church
Sunday supper: homemade pizza on soaked crust
Monday breakfast: leftover oatmeal bake, cold cereal
Monday lunch: cheese quesadillas and smoothies
Monday supper: leftover pizza
Tuesday breakfast: steel cut oats in the crockpot
Tuesday lunch: salad wraps
Tuesday supper: peanut chicken in the crockpot with brown rice
Wednesday breakfast: leftover steel cut oats or cold cereal
Wednesday lunch: sandwiches on soaked bread, canned pineapple
Wednesday supper: leftovers
Thursday breakfast: poached eggs with soaked-bread toast
Thursday lunch: kids will be at drop-off homeschool program while I work! easy day! I'll probably just throw together a salad :)
Thursday supper: crockpot lasagna
Friday breakfast: stove top oatmeal with choice of toppings
Friday lunch: cheese cubes, chopped veggies and fruit
Friday supper: leftovers
Saturday breakfast: Daddy makes waffles
Saturday lunch: salad wraps or various leftovers
Saturday supper: more leftovers
Workout recap:
Things looked much more normal this week as the stomach was feeling much better.
Monday: 5.36 miles at 10:25 pace
Tuesday: Crazy 8 workout
Wednesday: 4.6 miles; didn't track my pace 'cause my phone was dead!
Thursday: off
Friday: 50 minutes of pilates
Saturday: 12.5 miles, 10:27 pace
I was feeling great on the long run and could have easily tacked on another mile to make it a half marathon, but it started to rain so I ducked inside. Hopefully future long runs will feel as good!

I LOVE the idea of a Sunday babysitter for a few hours! I just shared the idea with my husband. :) Although we'll have to wait until baby is a bit older. Enjoy your time guilt free.
