Friday Night Muffins

No better way to spend a Friday night than baking with my girls.




We made these, with a mixture of spelt and millet flour instead of wheat. One batch we made with chocolate chips as the recipe called for, and the next we made with blueberries instead of the chocolate chips, cuz they were in the fridge and needed using up. I honestly can't decide which kind I like better... of course I had to sample one of each. Obviously.

They are totally delicious and you should go make them right now. 

Perfect celebration for the end of another long, cold week of this long, cold winter.

Incidentally, I checked it out of the library today:


Even though we're still in the middle of On the Banks of Plum Creek, and this book comes two books later in the series, I thought it might be good to read a bit of this one with the girls anyway, just to remind ourselves that at least we're not stranded in Dakota territory and the trains can't get through with supplies because of the snow piling up from blizzard after blizzard, and we're in danger of starving to death.  It's good to count one's blessings, no?  Despite the fact that the thermometer dipped below zero last night, and after next week's Monday snowstorm another "arctic front" will move through, promising bone-chilling temperatures for most of next week?

It could be a lot worse.

I mean, there's this lobster:


That's enough to chase away your winter blues right there.
